Creamy Broccoli & Cheddar Soup [Recipe]

I quite enjoy being alone. I don’t think I’m a loner – I love good company. But I am also perfectly content to be on my own. I love to get lost in thoughts and dreams – places I might visit someday, famous people I’d like to meet, foods I’d like to try, books I might write. Silence doesn’t bother me. In fact, I quite like it. Silence is not empty to me, but rather it is peaceful. Read more

Creamy Zucchini/Courgette Soup [Recipe]

On my recent trip home I got to catch up with some old friends, but I also got to meet new people. I love meeting new people, especially in rural Ireland where they seem so characterful, so full of laughter and stories. Meeting new people invariable results in being asked two questions – where do you come from and what do you do. The addition of the peanut butter, rich in protein and good fats, makes this a well-balanced and hearty winter meal. Read more

Quick & Easy Tomato Lentil Soup [Recipe]

The coldest, dreariest and seemingly longest month of the year is not the time for the self-inflicted misery of restricted diets and sobriety. The summer months are prefect for salads and smoothies. January calls for hearty, comforting foods that wrap themselves around you like a warm blanket. Read more

Lithuanian Cold Beet Soup | Šaltibarščiai [Recipe]

Growing up I was never a big fan of beetroot. I think this was due to the highly acidic pickled stuff you get in jars, which was pretty much the only type of beetroot available back then. My grandmother used it on all her salads and everything else on the plate would be tinted purple and tainted with its earthy, sour taste. Read more
